Curried Chana Dal Risotto
 
 
This one pot meal is super easy.  Just put all the ingredients in a medium pot, add heat, and enjoy!

Ingredients
  • 1 cup dry China Daal
  • ¾ cup dry millet
  • 1 cup grated carrots
  • ⅓ cup raisins
  • 1 cup shitake mushrooms
  • ½ medium onion, diced
  • 2 garlic cloves minced
  • 2 cups frozen broccoli rabe (or other leafy green like kale or spinach)
  • 1½ cups milk or milk substitute (i.e. plain almond or rice milk)
  • 2½ cups chicken broth
  • ¼ cup nutritional yeast
  • ½ tsp salt
  • 1 tsp curry
Instructions
  1. Put all ingredients in a 3-quart soup pot, cover, and bring to a boil
  2. Reduce heat to low and simmer for 30 minutes
  3. Stir often
Notes
