I’ve been trying to get more fish into our diets - not an easy task for someone who never liked fish! Tilapia is an easy to prepare fish that picks up the flavors of a marinade very well. These flavors combined for a delicious fish dish. Nutrition Nuggets Recipe: Lemon & Garlic Tilapia Print Author: OncoLink Team Ingredients
- 2 tilapia fillets
- Juice of 1 lemon
- ½ cup of olive oil
- 3-4 cloves of garlic, minced or chopped
- 2 Tbs. chopped parsley
- 1 Tbs. Dijon mustard
Instructions
- Place tilapia filets in an oven-safe baking pan – large enough so they do not overlap. Mix next 5 ingredients in a small bowl and whisk together. The mustard will act as an emulsifier to bring it all together in a creamy blend. Pour this over the fish and refrigerate 30-60 minutes.
- Pre-heat the oven to 425 degrees. Cook for about 10 minutes or until desired doneness - fish should be opaque and flake easily with a fork. Serve with a roasted vegetable, which you can toss with some olive oil, salt & pepper and cook in the same oven at same temp!
